Low Carb Cauliflower Breadsticks

I've been wanting to try out new recipes with cauliflower ever since I found the fresh riced product at my local grocery store!

Plus, I bought a silicone baking mat last year and have never used it. 

Cheesy bread that's good for me? Oh yes please!

Makes about 4 to 6 servings

1 package of riced cauliflower (fresh, frozen or do it yourself with a head of cauliflower in the food processor)
2 cups of shredded Mozzarella cheese, divided
1/2 cup of Parmesan cheese
1 large egg
1 tbsp minced garlic
1 tbsp chopped basil
1 tbsp chopped flat leaf parsley
1/2 tsp black pepper

Preheat the oven to 425℉. Line a baking sheet with parchment paper or use a silicone baking mat. 

In a large bowl, mix the riced cauliflower, 1 cup of Mozzarella cheese, 1/2 cup of Parmesan cheese, 1 egg, 1 tbsp garlic, 1 tbsp basil, 1 tbsp parsley and 1/2 tsp black pepper. Place the mixture on the baking sheet and spread it out into a large rectangle, pushing down to form it.

Bake in the oven for 10 to 12 minutes. Then top it with the other 1 cup of Mozzarella cheese, continue baking until it starts to brown. Cook for 10 minutes and cut into bread sticks. You can sprinkle some fresh parsley and Parmesan cheese on it and serve with your favorite marinara. 


Note: I left out the salt because you get plenty from the parmesan cheese. This is up to you. You can always add 1 tsp salt.
