Shrimp with Garlic Butter

I'm obsessed with garlic. And Shrimp. Right now the entire house smells like a garlic clove! :)

First I took a bag of mini peppers (multiple pretty colored ones), onions, cherry tomatoes and bacon, drizzled with olive oil, S&P, and popped them into the oven on 425℉. It took about 45 minutes for them to look the way I wanted them. 

Into the food processor I put 1/4 cup butter, 3 cloves of garlic and about 1/4 cup of parsley. I just cut the tops off the parsley and threw it in. Some salt and pepper as well and about 1 tbsp olive oil. Let it rip and it becomes this garlic butter that you just want to slather on everything. And I mean EVERYTHING. 

Then the shrimp. First put some butter on the bottom of a cast iron skillet, (SEE SKILLET HERE) then lay the shrimp on top, then more butter on top of the shrimp. When the veggies have about 20 minutes left to cook, pop the cast iron skillet into the oven. 

What you get is heaven in your mouth.
