Slow Cooker Mac and Cheese with Garlic Chicken


  • 1 lb boneless skinless chicken
  • 3 cups unsalted chicken broth
  • 2 cloves minced garlic
  • 1 tsp garlic powder
  • 1/4 tsp salt
  • 1/8 tsp pepper
  • 16 oz whole wheat pasta, whatever your favorite kind is
  • 12 oz shredded cheese (reduced fat)
  • 4 oz cream cheese


  1. Place chicken in slow cooker and broth, garlic, garlic powder, salt and pepper.
  2. Cover and cook on low 5 to 7 hours or high for 3 hours.
  3. Remove chicken and shred.
  4. Add pasta, shredded cheese and cream cheese to slow cooker along with the chicken.
  5. Stir well to coat and combine.
  6. Cover and cook on high for 30 to 60 minutes, stirring once or twice.
  7. Pasta is done when liquid is absorbed. You can add more liquid if necessary, adding 1/2 cup at a time if the pasta is not done yet.
  8. Stir and serve.
