Baked Cod

Dinner doesn't have to be fancy or complicated. This was a simple meal of baked cod with sautéed mushrooms and cherry tomatoes. Healthy and filling.

My grocery store (Giant) has frozen cod by Nature's Promise®. Wild Caught Alaska Cod. Free from added ingredients. No chemical additives. Boneless. Skinless. Raw. Individually wrapped. 150mg omega-3 per serving†. Excellent source of protein. No added hormones. Per 4 oz serving. 70 calories. 0g sat fat, 0% DV. 90mg sodium, 4% DV. 0g sugars.

I love to buy these when they are on sale and throw them in my freezer.

I combined 2 garlic cloves (minced) with lemon zest, S&P and 1 cup of breadcrumbs. Rubbed the fish with a little extra virgin olive oil and then pressed them into the breadcrumb mixture. Baked in a 400 degree oven for about 15 minutes (parchment lined baking sheet). A squeeze of lemon made it perfect.

The mushrooms and tomatoes I just sautéed with a little olive oil, S&P. Easy!
