One Pan Shrimp Tacos

I think we've established the fact that we love one pan meals. We love shrimp. And, we love tacos.

Why not put them all together?


  • 2 cups shrimp, peeled and deveined
  • 1 yellow pepper, sliced
  • 1 green pepper, sliced
  • 1 red pepper, sliced
  • 1 red onion, sliced
  • 3 tbsp olive oil
  • 1 tbsp paprika
  • 1 tsp salt
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp chili powder
  • 6 small tortillas
  • store bought salsa

  1. Preheat oven to 400℉.
  2. Place the peppers and onions on a parchment line baking sheet. Drizzle with olive oil and then sprinkle with the paprika, cumin, garlic powder and chili powder. Toss to coat them well and then cook for 20 minutes.
  3. Add the shrimp to the baking tray and bake until the shrimp are cooked, about 15 minutes.
  4. If you have a gas stove, like I do, I put the tortillas right on the gas flame, turning frequently until they are slightly crispy. If not, you can warm them up in the microwave or in a skillet. Just do yourself a favor and warm them up somehow!
  5. Serve the tacos with some salsa or greek yogurt and a generous squeeze of lime.
