I posted the recipes for the Cincinnati Style Chili and the Chili Stuffed Burritos and here is everything all put together!
That's a 1/2 of a burrito with a dollop of lite sour cream on my plate with the Mexican Shrimp and Rice.
So delicious and really easy to throw together.
Ingredients:
- 1 tsp oil
- 1 smallish onion, chopped
- 1 jalapeno, seeded if you so choose
- 1 small red pepper, chopped
- 1 large garlic clove, minced
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/2 tsp salt
- 1/2 tsp pepper
- about 1 lb cleaned shrimp
- 1 bag Steamfresh Brown Rice
- 1 lime
Directions:
- Heat oil in a large skillet.
- Add the onion, pepper and jalapeno and let cook for a few minutes.
- Add the garlic.
- Add the seasonings.
- Add the shrimp.
- While the shrimp is cooking, throw the brown rice in the microwave.
- Add the rice to the skillet.
- Mix everything together and add a fresh squeezed lime.
