Our grandson helped me with dinner last night. Oh boy. This is one picky eater.
Chicken on a stick.
Every time I said that, he giggled. hehehehe
- 1 package chicken thin cutlets
- 1 container greek yogurt
- 2 tsp brown sugar
- 1 tsp cumin
- 1/2 tsp kosher salt
- 1/2 tsp black pepper
- bamboo skewers (I used about 10 or 12)
Earlier in the day, I combined the chicken cutlets, yogurt, brown sugar, cumin, salt and pepper into a Ziploc bag making sure to squish everything together. Then refrigerated until dinner.
About an hour before, I soaked the skewers in water. This helps them not break off or catch on fire.
Note: If some of the cutlets are wide, slice them down the middle. One cutlet per skewer.
Lite up that grill and throw those bad boys on the grill for a few minutes on each side. It won't take long if they are thin like mine were.
I was going to make a spicy peanut sauce but I decided not to at the last minute. I just knew husband and grandson would not eat it. So, you know who would have eaten it all? Me. OK, no thanks!
If you wanted to make it, here is the handy dandy directions.
1/3 cup low sodium chicken broth
2 tbsp. peanut butter
1 tbsp. reduced sodium soy sauce
2 tsp honey
1 tsp sriracha chili sauce
1 tsp grated ginger
1 sm garlic clove, minced
Combine in a saucepan, whisk well. Bring to a boil, reduce heat and cook till smooth, stirring constantly. Set aside to cool to room temp.
