Shrimp Caprese Skewers
I threw together these cute little appetizers for pool side snacks!
Cut a cherry or grape tomato in half.
Stick a tooth pick in it.
Slide on a piece of mozzarella cheese; either balls or a log cut up.
Next a piece of fresh basil.
You could stop there but I then slid on a small pesto grilled (cooled) shrimp!
I took about a 1/2 cup of balsamic and cooked it down till it was thicker, then drizzled all over the appetizers.
There wasn't one left! I should have counted how many I made, huh?
