Love chicken fajitas? Me too!
Well, here is a way to have them in burger form! I use Arnold's Sandwich Thins for the bread. If you are watching your carbs, this would be great on a piece of butter lettuce as well.
I grill the burgers up for lunches this week so all I have to do is throw one in the microwave and put it together.
Ingredients:
- 1 lb ground chicken
- 3 scallions, diced
- 2 tbsp. chopped onion
- 1 tsp garlic powder
- 2 tsp chili powder
- 1/2 tsp chipotle chili powder
- 1 can green chilies
- 1 tsp cumin
- 1/2 tsp oregano
- 1/2 tsp black pepper
- 1/2 tsp salt
- 1/4 cup cilantro (optional)
- 1 green pepper
- slices of red onion
- 1/2 tbsp. light mayo
- 1 tsp sriracha
Directions:
- Combine the ground chicken including everything up to the green pepper. Mix and create four burgers. Tip: Place in the freezer to firm up the burgers.
- Preheat a grill pan and roast the green pepper, charring on the outside. Place in a Ziploc baggie.
- Spray grill pan well with cooking spray. Grill patties until cooked through, approximately 5 to 6 minutes on each side over medium heat.
- Slice green pepper into four pieces, discard seeds.
- Mix the mayo with sriracha.
- Serve the burgers on buns with a slice of pepper, red onion, sriracha mayo.
