Fajita Chicken Burgers

Love chicken fajitas? Me too!

Well, here is a way to have them in burger form! I use Arnold's Sandwich Thins for the bread. If you are watching your carbs, this would be great on a piece of butter lettuce as well.

I grill the burgers up for lunches this week so all I have to do is throw one in the microwave and put it together. 


  • 1 lb ground chicken
  • 3 scallions, diced
  • 2 tbsp. chopped onion
  • 1 tsp garlic powder
  • 2 tsp chili powder
  • 1/2 tsp chipotle chili powder
  • 1 can green chilies
  • 1 tsp cumin
  • 1/2 tsp oregano
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 1/4 cup cilantro (optional)
  • 1 green pepper
  • slices of red onion
  • 1/2 tbsp. light mayo
  • 1 tsp sriracha


  1. Combine the ground chicken including everything up to the green pepper. Mix and create four burgers. Tip: Place in the freezer to firm up the burgers.
  2. Preheat a grill pan and roast the green pepper, charring on the outside. Place in a Ziploc baggie.
  3. Spray grill pan well with cooking spray. Grill patties until cooked through, approximately 5 to 6 minutes on each side over medium heat.
  4. Slice green pepper into four pieces, discard seeds.
  5. Mix the mayo with sriracha.
  6. Serve the burgers on buns with a slice of pepper, red onion, sriracha mayo.
