Roasted Vegetables



It's just so easy to roast up a bunch of veggies for the week. Then all you need to do is microwave them. I find the convenience of doing this is so worth it. 

I used cherry tomatoes, red onion, zucchini, asparagus and Brussel sprouts. A drizzle of extra virgin olive oil with salt and pepper is all I needed. Roast in a 450 oven until tender, about 30 minutes or so. 

This ensures I will eat my veggies if I have no time to cook them during the week!
