Trying to lose those extra LB's from the holidays?

Well, here is a very simple meal for you. Salmon with Roasted Veggies. It does not getting any easier than this peeps!
And, if you are following Weight Watchers, this is a 2 pt meal...really...Salmon (1 pt), Yogurt (0 pt), Veggies (1 pt).
Ingredients:
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp smoked paprika
- 1/2 tsp ground cumin
- 4 oz fillet of salmon
- 1 tsp extra virgin olive oil
Directions:
- Mix the spices in a small bowl.
- Rub the salmon with the olive oil.
- Sprinkle on the spices on both side of the fish.
- Roast in a 450 oven for 10 minutes.
See? I told you!! I also put 1 tbsp of non-fat plain greek yogurt on top of the salmon and it was stupendous! :)
The vegetables are so easy...I used mushrooms, red onion, zucchini, cherry tomatoes and red peppers. Spread out on a baking sheet, drizzled with 1 tbsp olive oil, salt and pepper. Mix well. Roast in a 450 oven for about 35 minutes or until the veggies are tender.
You'll have veggies for days!
