Cucumber and Tomato Salad

Cool and crunchy. Perfect side dish for a lunch or dinner!


  • 1/2 medium Red Onion, diced
  • 1 large Cucumber, diced
  • 1 medium Zucchini, diced
  • 1 cup Cherry Tomatoes, halved
  • 1/2 tsp Salt
  • 1/2 tsp Black pepper
  • 1/2 tsp Extra Virgin Olive Oil


  1. I use a mandolin to slice up the onion, cucumber and zucchini. I halve the tomatoes and then mix everything together.

This recipe makes about 6 servings at 0 points on the Weight Watchers Freestyle Program. 

Also about 6 servings at 27 calories each.
