Cucumber and Tomato Salad

Cool and crunchy. Perfect side dish for a lunch or dinner. And the best part is that it's 0 points! 


  • 1/2 medium Red Onion, diced
  • 1 large Cucumber, diced
  • 1 medium Zucchini, diced
  • 1 cup Cherry Tomatoes, halved
  • 1/2 tsp Salt
  • 1/2 tsp Black pepper
  • 1/2 tsp Extra Virgin Olive Oil


  1. Mix everything together and refrigerate.
