- 1/2 medium Red Onion, diced
- 1 large Cucumber, diced
- 1 medium Zucchini, diced
- 1 cup Cherry Tomatoes, halved
- 1/2 tsp Salt
- 1/2 tsp Black pepper
- 1/2 tsp Extra Virgin Olive Oil
- I use a mandolin to slice up the onion, cucumber and zucchini. I halve the tomatoes and then mix everything together.
