Lunch Ideas

I used to get so tired in the afternoons. Sometimes having a really hard time keeping my eyes open. Like I had to put my head down on my desk for a few minutes. Thankfully, I work from home! Of course, now I realize that it was my lunches. Mostly carb heavy lunches. 

These days, my lunches are healthy and filled with protein. I have so much more energy! 

I wanted to share some ideas with you. I'm not one for prepping and eating the same thing day in and day out. I need, no, crave, variety. 

Spinach and Black Bean Quesadilla

Quick and easy to grill up. See Recipe

Grilled Turkey Melt (or Ham)

Sometimes I miss deli meats! So I was determined to find deli turkey and ham that was only 1 pt for 2 oz. See Recipe

Buffalo Chicken Nuggets

I can't tell you how much I love these spicy nuggets! I like to serve them with some Dijon mustard. Delicious! See Recipe
