I was looking for something different at breakfast...
This is what I came up with! Now, if you don't like your egg this runny, no problem. Fry the egg to your specifications and put it on after or scramble some or don't use at all! That's the beauty of "fridge surfing" as I like to call it. You can basically take whatever you have and make a healthy meal.
- 1 Joseph's Pita
- 1/4 cup Sorrento low fat Ricotta cheese
- 1/2 cup halved cherry tomatoes
- 1/8 tsp garlic powder
- 1/8 tsp black pepper
- 1/4 tsp olive oil
- 1 egg (optional)
- Spread the ricotta cheese on the pita bread.
- Sprinkle with the spices.
- Place tomatoes on top.
- Drizzle with olive oil.
- Crack an egg in the middle. (optional)
I tried to make this in the air fryer. Started out at 360 for a few minutes then bumped it up to 380 for another few minutes. The pita gets a bit too crispy before the egg is cooked, in my opinion. I'll have to keep working on temp and times with that cooking method. You can just pop this into your oven or toaster oven until the egg has set.
