This is a creamy dip made with chickpeas, roasted red peppers, lemons and garlic popular in the Middle East. It's very healthy and one of my favorite snacks. I tend to make mine a bit on the garlicky side so feel free to cut down the amount for yourself.
Ingredients:
- 2 cans of chickpeas
- 2 tbsp. cold water
- 1/4 cup Non-Fat Greek yogurt
- 4 cloves of garlic
- 3 tbsp. lemon juice
- 1 tsp salt
- 2 tbsp. sriracha sauce
- 1 cup roasted red peppers (packed in water)
- 1-1/2 tsp onion powder
- 1-1/2 tsp dried minced onion
Directions:
- Drain chickpeas and rinse under cold water. Let them sit out to dry for about an hour. Peel the skins off by rubbing them gently between paper towels.
- In a food processor, combine 1/2 the beans and puree.
- Add 2 tbsp. water and the remaining beans, puree well.
- Add in the rest of the ingredients, puree again.
