I'm very particular about my coleslaw. Store brands are too high in calories and never taste right to me. I decided to create my own recipe using bagged slaw. It's the right amount of creamy, crunchy and nicely zingy from the apple cider vinegar.
This is going to be a great summer recipe!
Ingredients:
- 2 cups packaged coleslaw
- 1 - 1/2 cups packaged red cabbage
- 5 tbsp lite mayo
- 1 tbsp Dijon mustard
- 1 tbsp apple cider vinegar
- 1 tsp honey
- 1/4 tsp celery seed
- 1/4 tsp salt
- 1/4 tsp black pepper
- 2 scallions, sliced thinly
Directions:
- Mix everything together in a large bowl.
I like to place in a re-sealable bag and store in the fridge to meld the flavors together. Others say to serve immediately.

This recipe makes 12 servings at a 1/2 cup for 1 pt each on Weight Watchers Freestyle Program.

Why do you not use fresh cabbage. Comes in red &green. I am a Cook. Make my own Cabbage. Yours sounds OK. Needs some tweaking.
