I got this idea from fellow Weight Watcher follower, @weightwatchinitwithrochelle, follow both of us on Instagram!
Wonton wrappers can usually be found in the produce dept of your grocery store. There are SO many things you can do with them. These adorable baked cups (or stuff them with spinach/artichokes and cheese!), dumplings by themselves or in a soup (see below), use a cookie cutter and then bake for some fun with kids, dessert dumplings (sugar free strawberry jam?), spinach and cheese ravioli's, wonton lasagna...I could go on and on!
For these, I used what I had in my fridge.
These would be great to serve at a party!
- 12 wonton wrappers
- 12 tbsp Fat free refried beans
- 4 to 5 cooked chicken tenders, chopped
- 1/2 cup Kraft Fat Free Cheddar Cheese
Scallions - don't be like me and forget to top them with scallions!
Veggies - optional
Fat free sour cream - optional
Sriracha - optional
- Spray a muffin pan and then gently place a wonton wrapper in each hole.
- Fill with 1 tbsp refried beans, chicken and cheese.
- Bake on 350 for about 20 to 25 minutes, keeping a close eye that the tops of the wontons don't burn.
I wanted them crispier on the bottom so after I took them out of the oven, I popped them in my air fryer for a few minutes.
This recipe makes 6 wonton cups for 5 points on Weight Watchers Freestyle Program.
Then I had some fun because I have all these wonton wrappers to use!
I filled these with some low fat ricotta cheese, Worcestershire sauce, garlic powder and then cooked them in the air fryer.
I have this awesome little wonton press that I've had for years and it still does a great job! I use to make dozens and dozens of dumplings and freeze them. Crazy!
