Z'Paghetti Girlfredo by Hungry Girl


I see lots of recipes out there that call for funky ingredients that I'd probably only use once. I tend to pass them over. I'd rather create my own visions of love based on simple ingredients. 

However, when I saw this recipe from Hungry Girl, I just knew I had to try it. One serving is 3 pts but I ate both servings. I honestly don't think 1 serving of zucchini would fill me up and I had the pts to do it, so why not? 

It was also very simple to make. I used my spiralizer to crank out 2 zucchini's. CLICK HERE. There are so many possibilities with the spiralizer. You can do zucchini like I did, saute with a tad bit of olive oil, garlic and cherry tomatoes. I love doing that during summer months for a light dinner. You can make awesome salads of cucumbers, sweet potatoes, zucchini with a light dressing. Let your imagination go wild!
