I'm all about easy, especially after a busy weekend! Hubby wanted ribs. We don't do much beef these days so I wanted to make him happy while making it easy for myself. Out came the Instapot.
First thing you need to do is take the membrane off. It's not that difficult, just a little tedious. Slide your sharp knife up under the membrane and slice it off.
Ingredients:
- Salt
- Pepper
- 1 rack ribs
- 1/4 cup G Hughes Hickory Sugar Free BBQ Sauce
Season the ribs with generous amount of salt & pepper or your favorite rub. Place 1 cup of water in the Instapot and then put in the basket. This is what I use from Amazon: Instapot 6QT basket
Place the ribs in the basket, standing up, like this.
Make sure the valve on the top is set to sealing. Then hit manual for 35 minutes for fall off the bone or 25 minutes for tender. Let the steam naturally release for about 7 to 8 minutes after it's done.
At this point, I took them out and brushed with my favorite no sugar BBQ - G Hughes Hickory.
I could have just served them like that but I was waiting on fries for Joe so I threw them in a 350 oven for about 15 minutes.
Delicious!
This recipe is 4 servings for 4 pts on Weight Watchers Freestyle Program.
Enjoy!
