Quick and easy summer salad. So crisp and refreshing! The next day I tossed in some cooked shrimp just to change it up.
- Cherry tomatoes, sliced in half
- fresh basil, chiffinade
- red onion, diced
- cucumbers, sliced
- 1 tsp Olive oil
- Chop up the asparagus into bite size pieces and saute them in 1 tsp of oil until tender.
- Mix all ingredients together.
- Sprinkle with salt and pepper.
I use this to slice up my cucumbers. It's great if you only have one item! Hand Held Mandolin
