Summer Tomato Salad

Quick and easy summer salad. So crisp and refreshing! The next day I tossed in some cooked shrimp just to change it up. 


  • Asparagus
  • Cherry tomatoes, sliced in half
  • fresh basil, chiffinade
  • red onion, diced
  • cucumbers, sliced
  • 1 tsp Olive oil


  1. Chop up the asparagus into bite size pieces and saute them in 1 tsp of oil until tender. 
  2. Mix all ingredients together. 
  3. Sprinkle with salt and pepper. 

I use this to slice up my cucumbers. It's great if you only have one item!  Hand Held Mandolin

This recipe made 4 servings for 0 points on Weight Watchers Freestyle Program. It depends on your veggie amounts as to how many servings you can make. I just made enough for 4 meals.
