My husband was having pasta and meatballs but pasta jumps on my hips and hangs out there for a good week, wreaking havoc with my scale and my brain!
I had grilled up a bunch of turkey burgers over the weekend and I went fridge surfing for a meal that was more on plan for me.
Ingredients:
- 1 zucchini, spiralized
- 2 garlic cloves, minced
- A handful of cherry tomatoes, halved
- 1 tsp parmesan cheese
- 1 cooked turkey burger
- 2 tbsp. tzatziki sauce
Directions:
- I tossed the garlic into a sprayed skillet and swirled them around for a minute, then added the zucchini and tomatoes.
- They don't take long to cook so I nuked the turkey burger for 1 minute and the zucchini salad was done by then.
- Mix in 1 tsp of parmesan cheese and place the turkey burger on top of the salad, then 2 tbsp. of tzatziki sauce.
Heaven and I didn't even miss the pasta hubby was eating!
