Banana Pancakes



I never used to eat breakfast. Ever. Then I read about how it starts your metabolism moving again and burning those calories. I had to force myself to eat and now I can't go without it! It's funny how you can get used to anything if you do it long enough.

Most of the time, I have Fage non-fat plain yogurt with a banana and some almonds but I've been loving these banana pancakes lately. And they are SO easy!

Ingredients:

  • 1 ripe banana
  • 1 egg
  • 2 tbsp quick rolled oats



Optional:

  • 1 tsp honey
  • 1/2 tbsp chopped almonds

The honey and almonds are equal to another 2 pts. 


Directions
:

  1. Mash the banana in a bowl, add the egg and the oats and whisk well.
  2. Spray a skillet over medium heat. Use a 1/4 measuring cup and pour in 3 pancakes.
  3. Cook for 3 minutes on each side.

I made these 0 point turkey sausage patties over the weekend and stashed them in the fridge/freezer. It takes 30 seconds in the microwave to warm up. Gotta have some blueberries as well!
