White Bean Soup


This is like a soup but also like a stew!. The lemon at the end really makes a difference and it gives you plenty of leftovers for lunches. You can change out the spinach for kale or collard greens if you like. Perfect for the colder weather! 


  • 3 tbsp olive oil
  • 1 large onion, diced
  • 3 carrots, diced
  • 1 bag of spinach
  • 1 tbsp tomato paste (I keep the squeeze tubes in the fridge for exactly this purpose)
  • 3/4 tsp ground cumin
  • 1 lb ground turkey
  • 3 garlic cloves, minced
  • 1 tbsp ginger (I keep it in the freezer and use a grater like this Grater)
  • 1 tsp salt
  • 1 quart of unsalted chicken broth 
  • 2 cans of white beans, like cannellini, drained and rinsed
  • 1 bag of spinach
  • red pepper flakes - optional
  • 1 lemon, juiced


  1. Heat a large pot over medium heat, add oil then onion and carrot. Saute about 10 minutes. 
  2. Add tomato paste, 3/4 cumin and saute for about a minute or two, stirring. 
  3. Add ground turkey, garlic, ginger and salt. Break up the meat as you saute for about 10 minutes. 
  4. Add chicken broth and beans. Bring to a simmer and simmer for about 25 minutes. 
  5. Add the spinach and mix until they have wilted. Simmer for about 10 minutes and then add the lemon juice. Taste for salt. 
  6. You can serve topped with a drizzle of olive oil and red pepper flakes, if you prefer. 

This makes about 6 servings.
