Orange Roughy


I've been hitting up our local fish mongers lately for fresh seafood. This is a beautiful piece of Orange Roughy that I simply baked in the oven. This is a white fish, similar to cod or tilapia which has a mild, delicate flavor and moist, large-flaked meat that holds together well after cooking.

DIRECTIONS. Put fish fillets in a greased 11x7 inch baking dish. Sprinkle with seasoned salt, and pepper. Drizzle with melted butter and lay a few lemon slices over top. Cover and bake at 400 degrees for 15 to 20 minutes or until fish flakes easily.

I served it with this side dish of Beans and Spinach.
